  2. Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook slowly for 8 to 10 minutes, allowing the fat to render and the skin to become deep golden and crispy. Flip the duck and cook for another 4 to 6 minutes for medium-rare or longer if desired.
  3. Transfer the duck to a plate, cover loosely with foil, and rest for 10 minutes.
  4. Discard most of the rendered duck fat, leaving about 1 tablespoon in the pan. Add butter, garlic, and thyme, then sauté for 1 minute until fragrant.
